Directions
Spray a cookie sheet well with Pam, butter, or margarine. In a bowl, beat the egg whites and water until a froth forms. Add the pecans and coat well. In a separate bowl, mix together the salt, sugar, and cinnamon. Add the dry mixture to the nuts and fold to coat the nuts well. Pour onto a prepared cookie sheet and bake at 225' for 1 hour. Stir often during the baking process to make sure you bake all the moisture from the nuts so they are candied when completely cooled.

Okay, so Recipe #1 is definately more like the one you get from the little stands like my sister claimed. Recipe #2 is like Christmas in a nut. #2 is so sugary it is more like candy. My household picked #1 with the exception of the one person I know with the sweetest tooth ever who picked #2! I like both and I have a sweet tooth, but #1 had just the right amount of nutty flavor and sweetness for me. I would go with #1, it's half the sugar!
